Our Austin Meet-Up had a great Paleo Holiday cooking demo. Chef David of Beetnik Catering was the man of the hour doing some amazing food prep! He and his crew showed us how to create a unique paleo holiday dinner. He is an amazing voice for change in the food movement in Austin. He supports grass-fed beef, and quality unprocessed foods. This man is where it’s at. His money is where his mouth is. While he admitted that he doesn’t lead a paleo diet, he does follow many of the concepts focusing on whole food, unprocessed food and food that has the best quality possible. He’s a proponent of small farmers and ranchers and it was a fantastic afternoon 🙂
They went through four great recipes from a Coconut Flan to a Mussle savory gel dish and the full Thanksgiving roasted, stuffed turkey breast. It was all very good and still a bit sinful, like every good Thanksgiving meal should be.
And the delicious Mussel dish~ I think this might have been my unexpected favorite
And finally a dessert of an Almond French cookie and a jello of apple juice, with figs and a red reduction sauce. Very Sweet!
I couldn’t help but eat it before I took a picture and I don’t even like taking pictures of food. I guess in this case I can make an exception because it was an actual class. Also, I do like photographing food before it’s ready. I like prep and pre photos.
